hi guys have got round to making to get my veg intake up but do you use to thicken it mine is always to thin for me
 
If you put some celeriac in your veg soup it will thicken up nicely when you mash or blitz it

you can mash up any vegetables to give you a puree and that would thicken your soup
a decent dollop of double cream stirred in just before serving works pretty well too or you could try adding a little guar gum
another option would be ground flaxseed
I hope some of this helps
 
I use cornstarch to thicken sauce usually. It has more 'thickening power' than flour, but does come with a few carbs (~5g per tbsp I think)
