I use 2 gelatine sheets which I soak in cold water for a few minutes before adding to the jelly if you use boiling water to melt the jelly it needs to cool down a bit before adding the drained gelatine
When I have a sweet craving I eat sugar free sweets which you can get in H&B and most supermarkets I know some people can't eat them because they give them the runs but they don't affect me that way fortunately even though I eat 4 or 5 at a time
