I was diagnosed about 2 months ago and yesterday my mum was diagnosed.
Im so glad I have db as otherwise my mum would never have found out (we were just testing with my meter when we realised her bg was high).
She is old school and likes her sunday dinners so I was wondering if anybody has any idea how to do tasty sweet potato mash other than boil and mash !!
The best way I've found to cook sweet potato is to roast them. But leave their skins on as they hold together better, plus all the minerals and fibre are in the skin.
They are also really lovely as baked potatos. Just stick them in the over for about 45 minutes and they are soft and lovely.
For mash they do taste a bit odd. So I mix half sweet pototo with half white/normal potato.
I dislike sweet potato intensely. It's a pity, because it would be a useful food. I prefer squashes, but they're a bit high carb. Make good babymush for my granddaughter though.
mashed, wedges, microwaved and of course roasted but our favourite is in soup
1 large sweet potato
1 butternut squash
1 pint of stock
ginger fresh or ground
fresh garlic
butter
cut potato and squash into cubes. Melt butter in large saucepan, gently cook until coated. Add stock and ginger bring to boil then simmer for 20 mins. Mix fairly well with hand blender. Serve with fresh pressed garlic. Serves 4
People that feel just because diabates is a life-threatening "illness" it should be treated with kid gloves and nobody is allowed to have a laugh. My humour got me through abuse, near death experiences, serious and debilitating illnesses and lifelong pain and deformity - why give up the thing that works??
I used to love them chipped (cut into chips and roasted rather than deep fried) or roasted or baked but I find they send my blood sugar too high ... better results with butternut squash - which you can roast or chip or make into crisps /// hmmmm /// much lower carb values than potatoes
