I drink a lot of water in the night and in the morning when I wake up I am still thirsty. I know I am drinking more during the day but surely I shouldn't be this thirsty at night.

Definite sign of high blood sugars. When you wake up in the night check what they are. Plus as said above you need to drink at least two to three litres of fluid including water a day.
Presumably you pee a lot as well which is a typical diabetic symptom and this is called polyuria and this in turn results in polydipsia which is drinking a lot of liquid. Controlling your blood sugar is helpful as is avoiding diuretics. The bad news is that tea and coffee both contain caffeine which is a diuretic.
My nurse advised me to drink de-caf but it made no difference. Controlling your blood sugar works a bit but it takes a few days to take effect. I now keep a tumbler on the kitchen draining board.
