The amount of carbs in salad varies a lot -what do you include?
What is your total for carbs a day? and per meal/snack/drink?
What are you drinking through the day?
I tend to snack between my two meals each days as I found that eating more than 30g carbs in a single meal would push up my BS, so I spread my carbs out between two meals and two small snacks.

My new hba1c came back at 58. I will take it at the 3 month mark next,
My diabetes control isn't good at all, i know some people on the fasting forum know this and from my hba1c too,
The older i get the more i feel that there's nothing i can do, i know its all diet i have maintained the same breakfast for about 1 year or more now 3 boiled eggs and a cup of coffee. And in the evening i usually eat something small like fish or chicken with salad, i take all my multivitamins and yet i still feel terrible low mood, low energy and fatigue.
Even with gyms closed i still exercise regularly but, i won't give up till i get my control back, its more harder with low mood and no energy but im trying my nurse wants me back on insulin but i wont give up i need to get this under control before its to late.
I have also slided back to a bad control, I don't even exercise anymore as all the fitness-clubs are closed and I don't do much isolated at home, but now I have started injecting Ozempic once a week, and it is ment to lower bloodglucose a lot, thought it might be a solution to you instead of insuline injections..
it is said to work on lowering appetite . and stimulating and making one raise ones own insuline only when eating and also lowering the amount of blood glucose produced in the liver, I have only just started injecting Ozempic , so I can't really say much of how it works in my specific case other than till now my appetite on the lowest dose of 0.25g (meant to end up at 1.00g /week )my appetite has lowered especially in the mornings..
my liver definitely have been producing much too much extra blood glucose all the time
Are you actually eating enough overall to give you energy? Enough proteins and natural unprocessed fats? It sounds like you are actually very low calorie as well as low carb. Not surprising if you are tired and have no energy on that. Your metabolism could well be slowed if that is what you’re doing.
If you need insulin, then there is no shame in that.
It seems like you’ve been struggling for a while. Perhaps it’s something to consider. It doesn’t have to be for ever but until you find solutions to your health problems.
It seems that you don’t have a good quality of life and something needs to change. If insulin helps with that it might be worth it.
I personally don’t see it as a failure if you do need to go into drugs, it really sounds like you have made a lot of changes and they aren’t working. Personally I know the impact of long term controlled high bloods. Using drugs and hopefully temporary to get some control back isn’t a bad thingI will see if it doesn't improve i will start gliclazide again because insulin hasn't worked for me i was on lantus and novorapid. I will see
