TIP: If you don't like VEG

Hi to any new people on the site.

I am one of these people that only ever eats veg if it's Christmas and someone sticks a few sprouts on my plate, any other veg just tastes yuk the rest of the year, so mostly I am a meat eater with chips, jacked pototo or roast potates (fries to some people).

Since my type 2 diagnosis a couple of weeks ago, I have tried to find out some healthier things to eat, all I hear is veg, veg, plenty of veg and more veg.

So, my tip is if you don't like veg, try it all raw more like a salad.

I have a bowl of water in the fridge with chopped or sliced, carrot, turnip, collieflower, cabbage, celery, sprouts and even BROCCOLI, all these are raw and taste totaly different as a raw snack or side dish.

And in only 2 weeks this is my preffered snack of an evening while watching tv, it used to be a bar of chocolate and a bag of crisps.

So if your not too keen on cooked veg, just try a few different ones raw. I might just work for you too.

As a child I used to dislike most vegetables, and deeply loathed cabbage. This persisted for many years, and I always tended to avoid them, until I discovered that what I really hated was badly cooked vegetables! I was subjected to vegetables that had been boiled for hours until they turned into a vile tasting sludge. This represents the worst excesses of school dinner cuisine, which was also perpetrated by various members of my family and is a crime against cruciferae. When I discovered this I, believe it or not, threw a cabbage tasting party - a meal where every dish had cabbage cooked in fascinating ways. Believe it or not it was a great success!

I suggest that most vegetables should NEVER be boiled. They should always be cooked very gently by steaming, or sautéing. It is important to make good use of butter and/or olive oil, and often add extra flavour with things like toasted almonds or a small amount of finely chopped bacon.
 
I just hate veg whatever way it is cooked. I can just about tolerate a bit of carrot but thats about it oh and am ok with mushrooms and onions. Otherwise I am stumped.
 
i have always hated sprouts and asparagus but have know found a way of cooking them .

I part boil the sprouts and then drain and chop. Add to a frying pan and add chopped garlic and fry in a little butter - add some cream for special occ - also a little bacon is nice.

Asapragus - part boil and fry in a little butter - yum!

Roasting veg is nice it seems to give them a different flavour - put any veg - i use mushrooms , onions esp red ones, peppers, baby toms , courgettes, carrots or anything! Drizzle with a little olive oil , spices like cayenne, seasoning, herbs - luvly!

Also think outside the box - add tinned tomatoes to stews and casseroles or make soup and puree the veg - wouldnt even notice it is there! you can use pureed veggies as a sauce as well .
 
I'm a veg lover, but mother of a veg hating (non diabetic adult) daughter. She's now married with her own family, so my problem has moved a couple of miles down the road. When she was little, I used to hide veggies.
Sauce for meaballs can have tomatoes, red peppers, onions and carrots. Add a little red wine and worcester sauce for seasoning and the result is delicious.
You can hide a lot in potato croquettes too if you are not a low carber. Or make home made burgers with veggies hidden in.
Cabbage, carrots and onion makes wonderful coleslaw.Chop finely and dress.
Curd cheese mixed with yoghurt(or cream) and seasoned with parika and salt and pepper. makes a delicious dip for raw pieces of carrot, cauliflower, broccoli, beans, cucumber, celery and anything else you care to try.
Cook peas in the microwave, with a little butter, but NO water.
Slice courgettes thinly and fry,
the list is endless.
 
Sorry but none of these ideas work for me.
I absolutely detest sprouts and can't even stand the smell of them. Asparagus is another of my pet hates too.
As for veg in casseroles etc...I spend my time picking them out. I make bolognese for my family and pick out the tinned tomatoes!!! To me pureed veg just tastes exactly like what it is...veg!!!
Roasting them doesnt make them taste any different and it seems that some spices upset my Byetta and make me sick.
Its not easy!!! I shall just have to stick to onions, mushrooms and a bit of carrot.
