When you do have a bit of time, chop those veggies - try to do it while listening to some pleasant music, or bring them and sit in the sofa and just chill while doing it.
Use frozen spinach, brocolli etc - things that are good and if they're frozen from fresh, they work too.
If you have an hour sometime, cook up a vegetable soup and freeze it in portions.
Carry some almonds with you - they're rich in vit E, calcium and good stuff including fat, but very low in carb.
Have some babybel cheese to take with you, and some chopped up veg like sticks of celery, cucumber, carrots if you tolerate them.
Cook dinner for two days when you're at it - if it then doesn't fit in, stick in in the freezer for next time. Pork chops in cream/tomato sauce with onion, leek, pepperfruits, shrooms for instance. Into oven, does itself once the chops are browned.
Stir fry's are easy once the veg is chopped.
Take some time, just two minutes here and there to breathe. Breathe, think of some place nice - a good holiday location, a special smile, something you achieved. Deep breaths. Maybe with a good cup of tea?
Dance a little bit on the living room floor, tap your toes to some scottish music, tidy up an old box of something, do light stretching exercises or pray/meditate.
