Unless your husband has metabolic syndrome and/or glucose dyregulation there is absolutely no need for him to go Full On LCHF. He can just go as low as he (and his digestion) like, or he can start gently and gradually go lower carb and higher fat over several weeks.
Many people are 'put off' this way of eating by going to Gung Ho and encountering the typical digestive changes that would occur with any major diet change, whatever that change may be. Whereas if they made the changes more slowly, adapting and developing new tastes, they are more likely to take to it like a duck to water.
