@Brekkie how are you getting on? I know we were diagnosed at similar times.

I don't eat breakfast and have a coffee with cream and butter when I awake. I eat after midday and don't eat anything after 7pm.

I usually have a cheesy omelette with home grown tomatoes for lunch, we keep hens, so use the fresh eggs from the morning. Variations of lunch include a selection of cheese, boiled egg, sliced cucumber, peppers.

Evening meal could be cauliflower or broccoli rice with spinach and paneer curry made with cumin and green peppers, sometimes I use a little onion but not always as to keep the carbs down. I make aubergine stir fry with green pepper also.

I also enjoy baked camembert with celery and cucumber and pepper slices.

I've recently bought some low carb bread from a company online and have a halloumi and egg sandwich sometimes.

I do miss potato very much as that was my favourite food and I ate it everyday, I haven't touched it in 12 weeks! I did try and make swede chips but it spiked me to much so haven't used that again but will try celeriac at some point.

With the advice of this wonderful forum community, I'm sticking to above ground veg, eggs, cheese, nut, olives etc and will start to experiment more when I've reduced my levels even more, always checking what spikes with my GM meter. I don't eat fruit at the moment.

I don't feel hungry between meals any more.

I hope that helps. Keep us updated on how you are getting on.

@Brekkie I've also been out for some evening walks with dog, just invested in a head torch for the darker nights. Let us know how you get on with your HBa1c result, I'm sure it will be impressive with all the hard work you have updating us on.

Best, B

@Brekkie That's fantastic news, well done for all your hard work, you should be announcing that in the success part of the forum.

Keep in touch and again really well done.
