Valsal, have you had bloods done, including thyroid and coeliac panel? In your shoes, if it hadn't been done before, I would want to be checked out for any malabsorption issues?
That said, I was at uni with a girl whose portion sizes were ridiculous, yet she was skinny (and I mean skinny) as a rake.
What sort of things are you routinely eating and drinking, and how are your blood sugars? Persistently high sugars can lead to weight loss or the inability to gain weight?
People come in a range of sizes which are normal for them. However, I know that 'normal' weight or underweight T2s can do low carb if they make sure they have enough fat - think about bacon, butter on veg, olive oil dressings on salad, add cheese to most meals, full fat greek yogurt, raspberries with cream, etc.

I’m a skinny ( bmi=19 ). I make a pudding which is a blend of mascarpone cheese , cream and vanilla. I add 3/4 raspberries or strawberries finely chopped. I use vanilla paste 1-2 teaspoons 1 pack cheese one container of cream. - you can add sweetener if you like. I prefer it without
Eat it after your supper to gently put on weight.
Another favourite is baked custard. One tub cream mixed with 3 egg yokes and 1-2 t spoons vanilla paste. Whipped and baked at around 110 degrees for 45 mins or till set. Delicious hot or cold
