What's For Lunch?

I wasn't sure if this would go in the recipe thread or not, so apologies if it's in the wrong place!

From my own experience and from what I've read lunches on a low carb eating plan tend to be one of the meals that poses a problem.
So I thought maybe us low carbers could share our lunches and get ideas and tips for our breadless lunch boxes!

So, today I had something slightly different than the usual salad - a ham and cheese "sandwich":

3-4 hearts of romaine lettuce leaves
3-4 slices of swiss cheese (edam or emmental work well too)
meat - I used ham and chorizo slices
I also finely chopped 1 radish, 2 spring onions and cucumber

Sprinkle some of the finely chopped vegetables onto the lettuce leaf
Roll the meat and cheese, add a little mayonnaise if needed
Place the rolled meat and cheese on top of the lettuce leaf
Enjoy!

I had a couple of fried eggs and some leaves from my garden. I tend to eat lunch more or less on the run, but then I'm at home.

I don't like lettuce, so I have about 40 grams of lettuce from a mixed salad bag, cucumber, spring onion and tomatoes and cut them all into small cubes or pieces with meat/cheese/egg etc. Mix them all together. yum.

Sure - there's loads to go around!
I was going to have the leftover turkey chilli my hubby made for dinner for lunch tomorrow but I'm gonna need some more sour cream.... It's a bit hot :lol:
 
I had last nights quorn bollognaise today, with colliflower and broccoli, and covered with cheese
