I have come across this before and I think it's quite important.
This explains a little bit more about the first phase insulin release. I find that i go very high 30-60mins after a meal but near normal 2-3 hours after a meal so i have been trying to do a bit research to find out why this is happening.......so far a lot of it is way over my head BUT interesting
I tend also to spike high around 1 hour after *starting* to eat, give or take a bit and usually back around normal by two hours. However by 3 hours out if I've spiked I may well be rebounding low, my pattern is zero Phase 1 and a Phase 2 which may be continued for too long once it finally gets started.
The actual timing varies a bit due to meal content but that's close enough for jazz
