Whitbyjet's choc muffins are great!

The heading says it all!

I have just made these muffins and they are absolutely delicious.

The only thing missing is the icing on the top.

They are quick and easy to make and I would highly recommend them. I managed to get 18 cakes from the mixture.
(Wonder how many will be left this time tomorrow :lol
 

I wouldn't dare, not this early on. I know me well enough to know one would lead to 2 to 3 :mrgreen: Maybe once I have kept my BG stable for a good length of time. I am going to keep telling myself the corn on the cob coated in garlic butter is better than muffins :mrgreen: :lol:
 
Marina - thanks for the feedback, now quickly go and freeze them, only leave out 2 - limit yourself to 2 a day and it will be alright
 
Aw I didn't think I'd be able to freeze them. And after all the effort making them I don't want them to go off! Thought I'd need to eat them all.

Only kidding. :lol: I'm taking some into work for my low carb convert friends but I promise to freeze the rest.

I made these muffins for Christmas instead of Christmas pudding, served them with berries and cream.

If you really want to have icing on them you can make a buttercream with sweetener, few drops of vanilla essence/extract or coffee granules or cocoa powder or grated lemon or orange zest, or you can make a icing with cream cheese/mascarpone and add flavourings to that.

I took some of these to the office last week to celebrate a birthday there, did a cream cheese frosting with orange zest = chocolate orange muffins.
 
Took them into work and they went down a treat .
Got loads of compliments and gave the recipe to a few folk.
Chocolate orange variation sounds yummy.

These are fantastic. I have made other desert stuff before (from other sources) but have always been disappointed, in fact gutted, but these OMG are the best. I have been lurking, reading the forum, picking up tips for a while now but never posted but I was compelled to write a post about these wonderful muffins.

Thank you Whitbyjet, I am now enthused to cook other recipes.
