Injecting at the proper depth is an important part of injection technique. Most healthcare professionals recommend that insulin be injected in the subcutaneous fat, which is the layer of fat just below the skin. If you inject too deep, the insulin could go into muscle, where it's absorbed faster but might not last so long (and, it hurts more when you inject into muscle). If the injection isn't deep enough, the insulin goes into the skin, which affects the insulin's onset and duration of action.

Most people dont pinch up these days.
However the reason for this advice is

When a needle penetrates the skin, tiny holes in the skin and fat beneath are created. There is a possibility that insulin can leak from these holes when the needle is removed. If you pinch the skin before injecting, the lined-up nature of the holes is disrupted, meaning improved effectiveness.

Today's needles are very fine and short and its quite rare for leaking to occur if you count slowly up to 10 before withdrawing.
If it's hurting more often than not when you inject check your needle size and ask for a finer gauge or a shorter length .
I use Novofine 0.25 x 6mm ones which work well for me
