Winter stew

hi there I’m new to the forum but have a question. I’ve adopted a low sugar diet for the last three months after reading a book by dr Michael morse which has greatly helped me to reduce my sugar levels. Breakfast has been whole fruit and natural yoghurt and lunches have been mainly fish/chicken salads followed by a decent dinner minus the refined carbs or starchy carbs. It is now coming in to autumn and I love stews but will these affect the blood sugar levels as I read that sweet pots, parsnips, swede and carrots all c@rry higher levels of sugar once broken down.....is this correct
 
Celeriac is lower carb than other root veg swede is not too bad I use lots of leek and garlic ,raw chillies ,caulli and courgettes .Serve with lots of green veg

If you can get a lamb Henry from the butcher it makes a great basis for winter stew it needs long slow cooking with the veg and seasoning I use veg stock cubes Cook the lamb whole then pull apart when ready take off the fat and put the fat into a hot oven for a delicious crackling .I find that I can put some meat on one side for later if just cooking for 2, or cook extra veg and freeze for another meal

I am going to find a lamb Henry that I know is in the freezer for tomorrow !!!
 
I made a mutton stew with sweet potato which was fine but roasted sweet potato gave me a huge spike.

Hi Andy, all veg are carbohydrates which is to say they are made of carbon and water which is exactly what sugar is made of. Your body breaks Carbs down into sugar for energy.

Its all about how fast this happens and how fast you use up the energy. Starchy veg like potatoes (starch =sugar) break down quickly. The new way of thinking is to cook things and leve them over night for the natural fat's in the stew to attach to the carbs taking your body longer to digest/break them down and thus less of an increase in good glucose levels.

The argument against putting the veg in the the stew is you are cooking the fibre out and this makes them easier/quicker to digest. For me the way round this is put enough carrot onion ect... in for taste and cook any veg to go with the stew separately.
