Yay! Baked my first (low-carb) cake

I was going to try this next week for Easter, but decided to give it a go today as I was at a loose end. It's a slow cooker low carb dark chocolate cake, and it is nice (better with extra thick double cream).

SLOW COOKER DARK CHOCOLATE CAKE

210g Almond Flour = 15g carbs
170g Xylitol (or other sweetener)
85g Cocoa powder (I used Morrison's) = 10g carbs
32g Whey Protein powder (expensive, but you can get a sample 40g packet for £1-2.50 on ebay/amazon) = 15g carbs
2 teaspoons Baking powder
Quarter teaspoon salt
112g butter (melted/softened)
4 Large eggs
170ml Hazelnut milk (or almond or coconut milk) = 5g carbs
1 teaspoon Vanilla extract
60g Dark chocolate/choc chips (optional) = 20g carbs

1. Grease the insert of slow cooker well.
2. In a medium bowl mix together the dry ingredients - almond flour, sweetener, cocoa powder, whey protein powder, baking powder and salt.
3. Stir in butter, eggs, hazelnut/almond/coconut milk, and vanilla extract until well combined.
4. Stir in dark chocolate (I whizzed it in food processor to break it up) if using.
5. Pour into greased insert and cook on low for 2.5-3 hours. It will be gooey for the first 2 hours 30 minutes, and become more cakey at 3 hours.
6. Turn slow cooker off and let cool for 30 minutes. Cut into pieces and serve with cream.

It weighed 1060g after cooking and contains about 70g carbs (50g carbs if you don't add the dark chocolate).

Well it was quite a lot of cake for just me so I have frozen half. I probably should have cut into portions and frozen. I don't know what it will be like when I defrost, but I don't see why it shouldn't be ok - most of the ingredients apart from the cocoa, sweetener and chocolate are much the same as @ewelina's quiche recipe which can be frozen.

I think I will add walnuts when I make it again. I found the recipe online, I think it was on dietdoctor website. The only ingredient not readily available was the Whey Protein. It can be bought in Health and Bodybuilder shops, but is expensive - about £20 a kilo iirc, but you can buy 'sample' sachets online for 99p-£2.50 for 40g. I bought a chocolate flavour sachet. for £2.49 and put in the whole 40g. It does have about 14g of carbs, mainly sucralose. There was a slightly dearer 'Gold Standard' Whey Protein which I think was £2.19 for a 30g sample sachet, and that had less sucralose, but I didn't see it until after I had ordered the cheaper version.
I don't know if the Whey Protein is essential for the recipe, but it wasn't shown as optional like the dark chocolate, so I assumed it is.

Hi @Badboydavey1 No I haven't looked for digestive biscuit recipes. If I bake biscuits I make @ewelina 's peanut butter cookie recipe - they are good.
But I like Nairn's Fruit & Spice Oat Biscuits - they have a nice cinnamon taste . The carbs are a bit high at 6.5g per biscuit (65%), but I find they don't affect my bs too much. I usually butter them. I buy them in 99p shops, they are also available in Holland & Barretts.
 
Brilliant @Prem51!! I'm getting excited as I've got myself stocked up with all my low carb baking goodies and can start at the end of my strict first 12 weeks LCHF... No dalliances until then.... Other than that OPPO treat

Can this cake be frozen, do you think?
I'd want to portion it , then freeze.
 
@ickihun Yes it can be frozen. I have since made a second one, cut most into portions and frozen. Defrosts ok. I defrost in microwave and eat it warm with extra thick double cream. I will probably try it with the Oppo ice cream.
 
I need to make a cake for a birthday at work and I think this might do the trick. I'm thinking I may remove the chocolate bits and use a lower carb cherry pie filling to make a black forest cake.

One question. Can I substitute 1 for 1 of erythritol for xylitol?
 
Wow @Prem51 this looks amazing! I've just bought a large slow cooker so will have to give it a go, thank you so much. I love the idea of having it warm with Oppo. Looks like the chocolate torte we used to buy from Gu Puds - served 10, me and the OH often would demolish between us

Think I need to go ingredient shopping .... is it best to buy Almond Flour online?

I bought it from H&B - I think they are doing Buy One Get One Half-Price at the moment. I didn't compare online prices so I don't know about that.
