I use cauliflower instead of rice, I make my own but I dd buy a pouch of it from Tesco the other week as an emergency lunch to keep in my desk, haven't tried it yet (much cheaper to make my own!) I usually have some in the freezer which takes minutes to cook - quicker than real rice.

I use cauliflower or celeriac instead of mashed potatoes

celeriac instead of oven chips

courgettes slices into sort of chunks instead of pasta quills

courgettes cut into thicker strips instead of fettucini

courgette as spaghetti - I use a julienne peeler much cheaper than a spiraliser :) but needs to be cooked gently or it will fall apart, I normally add to sauce to be warmed up

spaghetti squash is great when I can find it

aubergine slices instead of cannelloni pasta tubes

aubergine or courgette sliced lengthways or leeks folded out as lasagne sheets


Almond or coconut flour instead of bread for gratin toppings etc

Yep... Done that and it is superb.

I sliced courgette
and put it on a grill but in the oven and cooked it for 20 mins.. Then take out and layer between kitchen towel to soak up some of the moisture.... Then just layer as you would in a normal lasagne.

It is absolutely brilliant...

wow, :wideyed: there's so many choices and options to try :joyful: I really want to try celeriac but havnt seen it yet. I get spaghetti squash from Sainsburys, but have seen it in M&S and on line at Tesco. Thanks for all these ideas :)
