So…..returned to very low carb eating and then went on a couple of holidays…Mexico and Sri Lanka. Holidays can ruin things, even with great effort. My last A1C was 6.5….dang, right back where I started. Gathered myself, again, and this time carnivore, a dairy free version (except butter). The first three weeks were hard, I felt lousy wanted a handful of cashews and suffered allergy like symptoms. My blood sugars kind of went down but then bounced right back…seems 6.3 was my magic number. AND THEN…week four. A complete change! I felt amazing, tons of energy, n o sniffles, no cravings and the best blood sugars I’ve ever had! My morning glucose in the low 5’s and one day in the 4’s. I never go above 6.5 and see my before bed numbers in the high 4’s. I’m giddy. It’s been two weeks since the change and the numbers continue to be stellar. Best part, I’m totally enjoying eating what I eat…meat, butter, eggs. I have my coffee with butter. I do have an occasional pickle and use chipotle mayo (avocado oil mayo and ground chipotle) as a dip. My fat content is quite high. I have not changed my exercise, I’ve always gone to the gym for weight lifting and yoga and I walk a ton, at least 10,000 steps a day. I’m giving myself a three month course of this diet, then I may try to incorporate some cheese….but I’m not sure as I’m so flipping happy right now. So very curious to see what three months brings.
