Blood glucose levels

I have type 2 diabetes and had a carbohydrate rich lunch today. Can anyone explain why I have a higher BG (8.5mmol) 4 hours after eating than at 2hours (6.8mmol).

Different foods get digested and release their glucose at different rates, it really does depend on what you ate and what combination of foods made up your meal.
If your meal contained a good amount of fats for example, fats slow down the digestion of the carbs and can cause their glucose to be released into your blood over a longer period.
It's why pizzas can be so difficult to predict, many of us have been pleasantly surprised by our
2 hour level after pizza, only to find our levels continuing to rise for some hours afterwards

If I eat a lot of carb (not very often these days) whether it’s at lunch time or evening meal, before 7pm then I will very often have a raised FBG the next morning. So the consequences for me lasts a long time.
