I’m always looking for ideas for main meals. I invented this for our “Friday is Fish day”.
There seem to be dozens of variations on this "classic". Here’s what I did
First I made a lemon vinaigrette
About 100ml lemon juice, add salt, pepper, sweetener, Dried oregano a level teaspoon English mustard. Mix and taste, add a splash of water if too strong. Then about 250 ml oil. You decide if it’s olive or flavourless!
Whisk to thick consistency:
For the salad per person.
½ generous Little Gem lettuce sliced vertically,
a few rings of red onion
½ can fine green beans drained
1 boiled egg set yolk and cut vertically into quarters
2 small Jersey Royal potatoes boiled about 15 mins and sliced length ways into 4
about a dozen black olives
a couple of cornichons sliced into olive sized bits
2 Anchovies if liked. { T1 loves them. I don't!]
4 cherry tomatoes quartered
1/2 a can Tuna drained of oil.
Arrange on plate to look nice
You can do a serving plate or individual[I did individual]

Dress
Tastes great and minimal carb, as well as lots of vitamins, minerals and fibre

I don't know why this sounds so good as I hate fish but it does hehe, sounds lovely well done :)

I have the added problem of keeping protein low for T1, who has kidney failure [and who says he doesn't like fish except battered plaice from the chippy] The lemon vinaigrette is great with the fish.

One of my favourites if I'm in a hotel and can't find anything decent on the menu, sounds great.

I also vary it by replacing the potatoes with a handful of pasta.
