I don't know if there are any other allotmenteers on here, but if there are and you are having the same gluts as us then you might like this recipe. Even if you aren't here is a seasonal recipe anyhow :wink:
Courgette and mint soup
3 medium onions (I use red), finely chopped
1kg of courgettes (can use any squash, some of mine today was patty pan and crook neck squash), cut into slices or chunks
A generous handful of fresh mint
A tablespoon of grated ginger
A litre of vegetable stock
A glue of olive oil
Gently fry off the onion in the olive oil to make it soft not brown.
Add the ginger and squash, fry for a further few minutes.
Add the stock and bring to the boil, turn down to a simmer and cook for 10 minutes.
Liquidise it in batches adding the mint to the Liquidise.
Pass through a sieve, and reheat, adding salt/pepper if needed.
