Cauliflower Rice

Read something that Tesco is selling this. Anyone tried this and if so is it any good?
 
It's just plain cauliflower fluffed / scraped to look like rice - if you like cauliflower it's a good source of nutrient. It probably works out cheaper to buy a whole cauliflower also do the environment a favour by eliminating the packaging ;)

Just trying to find something to bulk out a meal instead of normal rice or spuds
 
I'd be inclined to go along with @photognut suggestion and just make your own.
 
Things that I found to bulk out meals Kelp noodles 0 calories & 0 carbs. Spaghetti Squash, scrapes out like spaghetti the only place I can find these is in Waitrose, I also use the spaghetti squash casing as a serving dish with home made bolognese sauce too. Courgette sliced into thin strips. Butter nut squash sliced into sheets and leeks sliced length ways makes for a good pasta replacement in Lasagne.

Diabetics can eat very tasty and nutritional food :)
 
Has Egg Plant got carbs in it?

According to this book, The Worlds Healthiest Foods
Egg Plant Nutritional Analysis of 1 cup cubed and cooked:
Calories - 35
Carbs - 8.64g
Sugar - 3.17g
looks like you are good to go with that :)

Thanks. It all looks too complicated for me. :arghh:

Strangely, I like the cup system. I don't regard it as an accurate measuring system, once I got used to it with a visual picture of what a cup size is, it's become a quicker and easier mental calculation than weighing everything using the kitchen scales. It is also handy if you are eating in a restaurant to think of a cup size when eating certain foods where you want to control the carb or calorie intake.
 
Lots of cauli recipes on the forum if you search. It's pretty much our staple equivalent of rice, although of course without the carbs of rice we have to balance up with fat.

I've just made my first batch of fat bombs, Lemon. One went down a treat with a cup of tea this afternoon. :)
