Gestational Diabetes with 3 pregnancies, on hormone tablets for endometriosis and Diabetes Nurse says I'm not her typical patient (eat healthily, exercise etc)

Had Gestational Diabetes with 3 pregnancies in 2001, 2005 & 2007 - diet controlled
On hormone tablets for endometriosis = weight gain, went from 7st 4lbs to 10.5st in 3 months at 27yrs!
Diagnosed with Type 2 on 23 Dec 2017 HbA1c was 55
Taking Metformin 500g Daily
I'm trying to reverse the diabetes, all help gratefully accepted
Was already on a low carb diet as I don't eat wheat or cow's cheese as it doesn't like me
