i am a carer for my mum who has been diagnosed with type 1 diabetes since 2000. she has complications associated with diabetes, such as neuropathy and retinopathy and has various other disabilities.
i have joined this forum/website mainly to reasearch, learn and understand from other people with diabetes. both type 1 and type 2. I have always loved to cook and have been responsible for cooking for my family since i was a child. as ive grown, ive learnt a lot about the management of diabetes alongside my mum and have learnt to cater to her needs food wise.as an adult, i am keen to turn cooking into a career and would love to focus mainly on catering to diabetic diets and needs. i am here to educate myself properly and to learn about others experiences with diabetes and how it has and continues to affect their lives, and what they would like to see or expect to see available from a fast food/restaurant setting. diabetes has affected mine and my familys life greatly, having lost a close family friend to diabetic complications (aged just 35) and my mums ongoing issues. i want to be able to educate diabetic people (and non diabetic people like myself) on managing their diabetes and provide stable, healthy meals and generally help them lead as normal and healthy a life possible. if you read this and would like to share your story with me or share recipes or have any ideas of what youd like to see available when eating out or anything really, i would love to hear from you and would greatly appreciate it to be honest. thank you for your time :)
