I agree with you in veggies. A lot of research I have done recommended fresh vegetable and some fruits and protein foods like tuna etc. I've been eating a lot of vegetables and healthier proteins and my insulin intake has been cut down a lot.

With the spikes and lows what types of insulin are you on? I was very active when I worked and my levels would constantly go low while working. I had to lower my long term insulin. In evening when I was no longer active my levels would go up do to no longer being active.
