    Give it a go and see. I went wheat free for a year many years ago, nothing to do with diabetes, just an experiment, and did make flat breads and flat-bread pizza using gram flour. Just don't expect your pizza to taste like pizza. On that basis, maybe give some of those other flours mentioned...
