I use 4 tablespoons and 1 can of coconut milk, half teaspoon of vanilla and leave it in the fridge overnight.
I like to add some Almond butter (get the 100% almond brand which is not sweetened) to something like this, really makes it taste great! Also, almond milk is nice instead of coconut. Other seeds and chopped nuts, berries if you eat them, full fat dairy or dairy free yogurt (e.g. coconut yogurt), melted 90% Lindt, cinnamon, homemade grain free granola... Lots of options.
