Special Fried Quinoa

Hi All, I don't know how much mileage others will get from this, but my girlfriend and I are both Type 2 and we craved some Chinese food.

I politely asked our local friendly Chinese takeaway if it was OK if I bought my own Quinoa to use instead of rice. They said it shouldn't be a problem.

20 minutes in the instant pot later, I took our plastic container full to the Chinese guys, and they made something which is hard to differentiate from special fried rice!

My measurements did go up slightly, but nowhere near using any kind of rice. As I say, your mileage may vary, but it's killed off my craving.

Next mission Pilau Quinoa... I'm going to try and find an Indian restaurant willing to join in.

Interesting your experience with quinoa, I’ve never been able to eat it on a low carb diet, it still has about 22g carbs for 110g cooked. Like you say we are all different and the fats in the meal may have slowed down the absorption of carbs.

You say you did go up slightly - do you know what your portion size was? what your testing times were and your numbers? Did you test at 3 hrs to see if your BG continued to rise?

I find grated cauliflower as in cauliflower rice also gives as good as results in rice dishes as rice, maybe see if your local takeaways would oblige with giving this a go :)
 
Love the quinoa idea, super clever! Definitely gonna mess with that next time I crave Chinese. But yeah, keep an eye on your numbers, testing after 3 hours is a solid move. Cauliflower rice is a good backup if quinoa’s a no-go.
