That's a really nutritious meal as well as being low carb! When we focus on diabetes, it's easy to forget that we need certain nutrients that ultra processed foods don't provide. We aren't just diabetics (or people with diabetes) we need a nutritious diet to keep our whole bodies healthy, just like anyone else.I do Time Restricted Eating, so my first meal is always brunch. It has to be substantial as I'm always pretty hungry by then. I have 250gm Greek yoghurt with pine nuts, pumpkin seeds, sesame seeds and sunflower seeds, half a dessertspoon of each, and a kiwi fruit for my gut health, followed by half a dessertspoon each of hazelnuts, brazil nuts,walnuts almonds and pecans.
