Newly diagnosed child diabetic - thinking treats are now not at thing for snacking and desserts - ideas welcome

Son recently diagnosed and we are controlling carbs but it has ruled out a few of his favorite things until we get more confident at counting and insulin doses..... wondered if people had any good ideas or books etc.. on sweet treats for kids that are type 1 - we are looking at low carb snacks but alot of them are low sugar and not low carb....

If you are ok with some very straightforward baking this company sells some cake mixes which are good. I tend to make them into muffins rather than a big cake. It is fairly easy to make a low carb ice cream with eggs/cream/berries and sweetener. I bought a cheap ice cream maker to do that and just adapt normal recipes.

What would he normally snack on before his diagnosis?
 
HI Really appreciate the reply and the links.... he's newly diagnosed so at the moment its all a bit overwhelming for him and we are reaching the emotional challenges etc.. before diagnosis he'd go to the shop and pick up some sweets or chocolate or toast and nutella etc... we've said these things are all doable but involved injections at the moment - its a balance of having what he wants v's him not too keen on injections (but getting much better).. also us working out combinations and what insulin doses so it becomes more automatic... guess its tricky to find something that's sweet treaty and grab and go without consideration - weve got some similar cheese snacks and found low carb jellies and varying carb levels of snacks... we also have got almond flour to start cooking more cakes / cookies...

10cal jelly is pretty decent imo theres something like 0.2g carbs in a pot. 55p from aldi/lidl's or the hartleys one usually on offer somewhere at at 70p. i note you had mentioned more confident at counting carbs i2c ratio for me changed a lot over time.. would suggest ask for dafne course (if havent done already) that should help with some confidence. be aware i2c ratio's can change over time. if he is on fixed dosage (i was when diagnosed initially) its likely that they perhaps based dosage off what he said was 'normal' diet for him.. Holland and barret have a few sweet treats that are pretty low carb however expensive.
