    I would also check their ingredients for non compliant foods - just because they are low carb or keto doesnt mean they are diabetic friendly, they could contain wheat, soy, canola oils etc.

    Test as you start to eat, then test at one hour, then again at 2 hours. At 1 hour you will catch the spike, so anything more than a 2 point rise is probably not good to eat. At 2 hours you should be back to your starting number, or close to it.

    Mushrooms could be the problem, they do spike some people (me included). Try them again another day, test, and see if you get a similar result.

    Do you test to see your blood glucose numbers. The sickly feeling could be your numbers shooting up. You should try the LCHF way of eating, low carbs, higher healthy fats. My numbers came down and are steadily in the mid 4 to low 5 range and I feel 1000% better than 12 months ago.
