What have you eaten today? (Low carb forum)

Tuesday 25 April - bed 7.1 FBG 7.3. I have most of this week planned out (although I may swap some meals around). B. TAG and 2 slices of SRSLY toast with benecol spread and, thanks Mrs T123, nursery food! 2 mashed up boiled eggs with a little butter and salt. Benecol dairy free. L. 6 almonds...

What have you eaten today? (Low carb forum)

Rice is another thing that affects a lot of us. Cauliflower rice (just grated Cauliflower) is a great substitute for all things "rice" - although I doubt I'd make rice pudding out of it! [emoji16]

What have you eaten today? (Low carb forum)

I use spirallised courgette. Shredded cabbage also works. Courgette has a habit of being very "wet" despite trying to get liquid out of it. I loved Oomi noodles (and the Lidl equivalent), but both vanished of the face of the earth during lockdown, never to return. I've tried other subs, but I'm...

What have you eaten today? (Low carb forum)

Sunday 23 April - bed 7.8 FBG 8?? Must have been the mini ribs I took from Hubby's Chinese. Back to swimming lessons with the youngest today. B. TAG and 2 slices of back bacon, 1 fried egg, santini tomatoes, and 2 slices of SRSLY toast with butter. L. Nothing D. Another from the M&S incoming...

They are on Facebook as well. Their pasta dishes look amazing! Wonder if they will franchise elsewhere in the country.

They are pickled. I checked the ingredients. There is some sugar (horrors!) in it, too, but it's well down the ingredients list. I also spotted mango and cornflower, but again, well down the list. The main items are the pickling mix, tumeric, chilli, and garam masala.

It's straight out of M&S, I'm afraid (as were the anchovies in parsley & basil). It's the start of their summer bits and bobs coming in.

What have you eaten today? (Low carb forum)

@Annb I've had that before, being suddenly put out mid post, and it is infuriating. I found it was commonplace after 11pm. I got into the habit of continuous saving for a while. Today, 22 April, bed 7.4 FBG 7.2. I had a planning day. Did my shopping yesterday, but I still had to nip out a...

What have you eaten today? (Low carb forum)

    @Antje77 - I agree with @shelley262. I've made meat'za before. They're a bit bigger and take around 25 mins at 180 fan. 20 mins @ 180° seems fine.

What have you eaten today? (Low carb forum)

Gee, I'll be glad when I get my specs next week with proper reading lenses in the varifocal. Between @PenguinMum drinking Octopus Tea, I now reckon @Antje77 has a couple of wigwams for a hypo, and @mrs A2 has a sister who doesn't approve of her WOE but she's 12! I was about to suggest a bit more...

What have you eaten today? (Low carb forum)

As my mother in law used to say, "Patience is a virgin!" I have a very heavy bottomed frying pan. I melt a mix of butter and olive oil in it. The sea bass, I score it with diagonal lines on the skin (taking care not to cut all the way through), then I rub some oil and sea salt into the skin...

What have you eaten today? (Low carb forum)

Hope this cheers you @Antje77 , although I wouldn't try this on your kittens! It does, though, show the fluffy, deliciousness of a souffle omelette. If you make it savoury, you can add a mix of finely grated cheese to it. 2 or 3. Sweet? Many permutations.

What have you eaten today? (Low carb forum)

I'll second that. The low-carb fruit loaf is just online. I've just had two slices. Like @DJC3, I keep it frozen (along with a supply of their bread and artisan rolls (all low carb).

What have you eaten today? (Low carb forum)

Delia did a lemon curd one. I have low-carb lemon curd on my CMT, so that would be doable. The other one that springs to mind with me is one with mixed berries that have been soaked in gin? Correct, don't mention banana & rum! I've been having banana thoughts recently. [emoji53]

What have you eaten today? (Low carb forum)

It was the exterior of @Rachox omelette that made me think about it. Crisp outside and light as a feather interior. I made both savoury and sweet. Since I have SRSLY LC jam, sweet could be a possibility! I can just about taste it. I'm feeling very retro.

What have you eaten today? (Low carb forum)

Thursday 20 April bed 7.4 FBG 7.4. Have a wonderful holiday, @PenguinMum. Early start today, as son &DIL were off on a coach trip with her parents. Boys were at mine for 7.20am, so I was up and about very early to get showered, dressed, coffee, etc, before the tsunami hit! At least we got a bit...

What have you eaten today? (Low carb forum)

That was a very quick month! Having said that, DIL's parents are also here from the USA for a month, and they only have 1 week to go now. Seems like no time since they arrived.

Congratulations on the HbA1c! Your omelette has reminded me of an omelette version I haven't made in years - a souffle omelette. I must store that thought as they were quite delicious.
