    Low Carb Alternatives

    When I make lasagna I use square slices of cheese instead of pasta sheets or you could even use just slices of turkey cold meat or whatever you like to separate the layers of mince - I then finish it of with mozzarella cheese on top - I must make some again soon ... I have also made pizza...

    Yes, sometimes I am pleasantly surprised too at what I can get away with - at Christmas I have been known to steal a few normal chocolates if they are around and yes I check my BS and its a lot better than what I expected and I sometimes wonder if it kicks my sluggish whatever in to working...

    Yes sounds like it - the 2 slices of bread and sugar in your coffee would be too much for me too - a guide is usually if your BS have gone above 2 at the 2 hour mark (after 1st bite) then it is too carby. I also try to keep all my food under 7.8 at the 2 hour mark.

    I have heard of people who have achieved remission, then went back to a carb heavy diet again and could not get back in to remission again for a 2nd time... so I have the occasional treat but this is always at the back of my mind, as much as I would love to go back to Cadburys chocolate, pizza...
