    HBA1c after low carbing.

    Was diagnosed in January HBA1c level of 88. Have been very low carbing since and it is now now 36. Absolutely delighted, just had to share the news and thank everyone on the forum who has helped with meal ideas and encouragement.

    They are excellent. Personally think they taste just like a normal wrap. I normally fry or grill mine for a panini/ quesadilla but my husband has them too and he hasn’t noticed that they are low carb.

    Had left a lovely big tomahawk out the freezer for dinner which sadly had not defrosted in time. So that’ll be tomorrow. Instead fasted for 24hrs and had a saag paneer and garlic butter chicken tikka take away for dinner. Looking forward to the epic steak tomorrow though!

    Lunch - cheese and chorizo toastie using SLC bread, squirt of may and some Matthesons. Dinner - Gammon steaks with cauliflower cheese and buttered cabbage. A DGF strawberries and cream blondie and a square of Green and Blacks mint chocolate.

    Lunch - creamy mushrooms on 2 slice of SLC toast. Got a little peckish in the afternoon and had 2 Babybel and a mini chicken satay skewer. Dinner - Nando’s take away of chicken wings and halloumi. Definitely went overboard on the halloumi. A DGF brookie with tea.

    Lunch - 2 slice of SLC bread with butter and corn beef Dinner - pulled pork with G Hughes sugar free BBQ sauce, homemade guacamole, spoonful of yoghurt, cheese and jalapeños. Predictably a DGF brownie. I cannot get enough of the strawberries and cream flavour it feels like a custard slice.

    Another OMAD + today. A quarter of a Matthesons sausage while cooking dinner. Dinner - aubergine lasagne followed by a few squares of green and blacks mint chocolate with a cuppa. First set of bloods being done on Tuesday since diagnosis, eek!

    OMAD + today Cup of tea and an almond butter cookie. Dinner - Beef Fajitas with pepper and a little onion, inside a car zone wrap with sour cream, homemade guacamole and jalapeños. A DGF lemon cake and a cuppa. Spent most of the day cleaning which made the OMAD much easier.

    Sorry I am just seeing this! Very similar to @MrsA2 I fry mushrooms in some butter, garlic, onion granules and salt and pepper. Then add double cream and reduce to desired thickness. Sometimes I had some mustard!
