    I put it down to the fact that I'm not urinating anywhere near as much now I have tighter BG control. About 5 times a day instead of hourly at least.

    What you are eating is considered healthy for a non diabetic. To get control of your BS, your diet is completely wrong as it's predominantly carbs and that is why you can't get better control.
