What have you eaten today? (Low carb forum)

I'd say rustic rather than scruffy. It looks lovely.

It was, @LivingLightly - I'll have to ask the takeaway chef.

What have you eaten today? (Low carb forum)

This evening I had a chicken tikka with a side salad. And it was lovely.

What have you eaten today? (Low carb forum)

Thanks, DJC3 - it wasn't bad. Not nearly as nice as last week's, though. However, the roasties were stunning, even if I say so myself!

What have you eaten today? (Low carb forum)

After last Sunday's success, I thought I'd do a repeat performance. So I did lamb shanks again, with steamed cabbage, and Maris Piper potatoes roasted in coconut oil.

What have you eaten today? (Low carb forum)

Today, on the hottest day of the year so far (in the UK), I had a chicken & mushroom curry, surrounded by a small ring of basmati rice. I made the curry yesterday. From scratch. No jars were harmed in the making of this curry. And while the recipe, that I loosely followed, didn't mention...

Can i become resistance to insulin?

Yes, it certainly can. May people with type 2 are, including me. Many people find that losing fat (particularly visceral fat) and increasing lean muscle mass helps. There's more muscle to soak up the glucose, reducing the need for the pancreas to secrete high levels of insulin. Obviously, eating...

What have you eaten today? (Low carb forum)

I marinated some chicken thighs overnight in lemon juice, garlic, olive oil, Greek yoghurt and a selection of spices, in an attempt to make chicken shawarma. I don't know whether I succeeded or not, but it was very nice, served with a side salad.

What have you eaten today? (Low carb forum)

For lunch today, the cafe made me a cheese & mushroom omelette, with a side salad. It was very nice too.

    Food help !

And get some packets of pork scratchings. Much less carby (if at all) than crisps, and far more filling.

What have you eaten today? (Low carb forum)

Thanks, @DJC3, it was lovely - really tender. As was the rest. It's only the second time I've done roasties in coconut oil, and they took on an almost sweet, nutty flavour. I'm trying to stay away from seed oils for cooking.

What have you eaten today? (Low carb forum)

Today, for Sunday lunch, I had a lamb shank with red wine gravy, accompanied by Pembrokeshire chipper potatoes roasted in coconut oil, plus carrots, peas and green beans. I know it's not strictly low carb, but I par-boiled the spuds yesterday and refrigerated them overnight thereby rendering...

What have you eaten today? (Low carb forum)

I'm always impressed by your small portions, @Rachox. I tend not to like smoked salmon that much, but I'd make an exception in this case. Myself, I made a red Thai curry with chicken breast, mushrooms and baby sweetcorn, accompanied by a small portion of wild rice. The chillis were a bit on the...

What have you eaten today? (Low carb forum)

Today I made a smoked bacon, mushroom and cheese omelette. In a failed attempt to compete with @Rachox's creation, I'm presenting said omelette in cinemascope. I did cut it so you could see inside, but it didn't really work, so you'll have to take my word for it. On the plus side I found a...

    Mixed results???

I just wonder how much butter you put on the crumpets. Butter would help.

What have you eaten today? (Low carb forum)

The steak in the fridge expired today, but I didn't really fancy it, so I chopped it up and made a sirloin steak vindaloo, with mushrooms, accompanied by a thin ring of basmati rice. It was nice, and not too hot.
