    The dressing on the salad might have had sugar in it. The mayo in coleslaw too could contain sugar or sugar subsitutes with higher GI than sucrose.     Very low blood sugars at night

    Great! You won't feel good intially after reducing carbs. But, it's a matter of time. You will gradually start feeling better on low carbs..... Frequent hunger will reduce.
