    Variability between 8.5 and 10.0 seems quite high, and 4 years for a blood test seems like quite a long time. Please be careful: I myself don't really like testing much, but often it's the only way to really know what's going on.

    I'm not sure your results are unclear. A fasting blood glucose reading of 10.0 seems to send a fairly clear message.

    Are we talking pork or beef liver? If pork, give it a miss. Frankly, I doubt even beef is worth the effort: I don't see any big nutritional advantage. I like all kinds of liver- pork, beef, goose and chicken, but as a weapon against diabetes, it just looks like another meat product.

    Sorry, that's a good point about the Bisto- I just meant the base product is carbs, so it's one other factor adding to the total carb load.

    This is a great question: my dad was diagnosed with T2in the mid 1990's, and it was part of my life from that point onwards: the obsession with numbers, the testing. When I was diagnosed with "pre-diabetes", I joined his nightmare: it's legitimately the closest bond we have.

    if you have a microwave handy, pork chops and broccoli, salmon fillet and cauliflower, chicken and sauerkraut/ cabbage are great options. Mix and match the meat and veg, and you won't get bored

    Sulfite allergies can cause shortness of breath and wheezing, so that could be one plausible explanation. Better to get it checked though- as Jo says above, it could be any number of things.

    It's a tricky one, but canned beans are really quite a high carb option. Could you eat eggs? Limiting yourself from eating animals puts you in a tight spot diet-wise. Can you eat fish? Egg mayonnaise or tuna mayonnaise would be my suggestions.
