What have you eaten today? (Low carb forum)

Because I'm not even prediabetic any more I could have cake if I wanted - I can have whatever I like really, but choose not to for the sake of continuity (and prevention being better than cure). I did look at the selection of mini gateaux that were available after lunch, but decided against...

What have you eaten today? (Low carb forum)

Away last night and today at a craft weekend - a Crochet Sanctuary, which sounds a bit pretentious but is a lovely day of idle chatter and crafting. Have in the past struggled to find anything in the buffet lunch provided but today was a triumph. I hadn't had breakfast as I slept late and wasn't...

What have you eaten today? (Low carb forum)

It's a perfectly valid question [emoji23] luckily there are customer toilets! My fluid intake is pretty high and what goes in, must come out!

What have you eaten today? (Low carb forum)

Had what I thought was a cold - felt weak and shivery yesterday with a terrible sore throat - still have the sore throat and snotty nose but everything else is fine! I'll choose to ignore it. Bit of a jumbled day today as far as timing goes. Breakfast - leftover coconut flour pancakes with some...

What have you eaten today? (Low carb forum)

I'm sure everyone is sick to death of hearing about pancakes but I did manage some made with coconut flour, after a fashion! They're delicate little creatures and I had to make them small or they wouldn't flip, they just folded up in a pile. Slightly bready in texture but acceptable. Drenched...

What have you eaten today? (Low carb forum)

Hello there - here's the recipe I used, but there are quite a few varieties. It's not very nice unless toasted (in my opinion) and it's quite soft and cakey but a totally acceptable substitute for bread. And quick, obviously! https://jenniferbanz.com/90-second-microwave-bread

What have you eaten today? (Low carb forum)

Yesterday ... I decided on Faturday a day early so had Nandos for dinner - I try to stick to the least carby options but I really fancied a burger, so I had a sunset burger but only ate half the bun. Had macho peas and roasted veg with it so not the best for carbs, but much better then chips or...

What have you eaten today? (Low carb forum)

My daughter does a mean chilli which is actually a Slimming World recipe, and she only leaves out the beans because she doesn't like them. She is chief spice tester and once I've put in the mince, tomatoes, garlic, onions (and sometimes we put in mushrooms and peppers) I let her loose with the...

I'm like that with baking powder [emoji40] in my pre low-carb days I used to say I was able to tell how much baking powder scones had in as they made my teeth squeaky [emoji23]

I read somewhere that adding Xanthan gum helps to recreate the doughy texture if using almond or coconut flour

Pretty standard day today Breakfast - usual 'muesli' with coconut milk and berries, tea Mid a.m. - Atkins coconut bar Lunch - salad, chicken, nuts, feta stuffed peppers, celery sticks and salsa dip Dinner - pan fried rib eye steak, mushrooms, broccoli and asparagus (all done in the same...

No photos from me today - the only thing snapworthy was the fathead garlic bread but it's all gone [emoji23] however I think I need to make my food look less appealing as my husband keeps saying 'can I eat that?' well, you *can* ... whether you *should* is another matter [emoji6] Breakfast -...

What have you eaten today? (Low carb forum)

Breakfast - started the day with a low carb 'English muffin' which was very much like soft brown bread. Really good - especially with a big dollop of butter and some marmite. Mmmm. Bucket of tea. Lunch - rollitos, pecans, prawns, sun dried tomatoes, celery. Sugar free jelly and a low carb...

My very favourite fish is smoked basa/river cobbler (a catfish) which sometimes comes from Vietnam. It's a bit like smoked haddock but cheaper and with a more delicate, almost creamy taste https://groceries.asda.com/product/cod-haddock-white-fish/asda-2-smoked-basa-fillets/910000454813

What have you eaten today? (Low carb forum)

It's a 'chain' pub and I couldn't see any sign of salad or veg options with many of the meals, save for a token gesture of a side salad. It's not really a problem as I'm back under the prediabetic threshold but I like to stick to the 'programme' as much as poss!

What have you eaten today? (Low carb forum)

Breakfast - the usual 'muesli' today with the addition of freeze dried raspberry pieces which I stole from daughter, tea Lunch - met up with a friend at a pub and that was the hardest menu I've ever had to try and find something on. Everything was pastry, chips, bread, wraps, potatoes, stodgy...

I'm on my second piece! It's very light tasting and not too sweet. My sweet tooth packed its bags when I started low carbing, and I find some things almost unbearable now!
