Hi
Made a homemade celeriac soup today which I felt would be ok for my blood sugar levels. Tested after one hour and the meter said 9.7. Am I worrying unecessarily, should it be that high or doesn't it make too much difference as long as it goes back down after 2 hours. The soup contained celeriac, onion, garlic, leek, 2 small new potatoes and water. Tasted great but now I'm not so sure.

What was your pre-meal reading ? If it was highish then the overall rise may not have been so much.

The potatoes would have some impact as, boiled in soup, the starch would convert more quickly.

Did you use any kind of stock in the soup, stock cubes also have some carbs in them.

Try it again without potato and see if it does the same thing. Did your Bg level go back to normal after two hours.

If you had been very active just before lunch then your Bg level may have been on the rise anyway. There are a lot of variables that could have caused the rise as well as the soup.

Hi Sue
Just did a 2 hour test and its 9. Guess the celeriac soup is going to my non diabetic husband! Thanks for your help in this matter. I will alter the recipe and leave out the potatoes.
