I'm not a coffee drinker myself but If you are only drinking 2-3 cups of coffee per day, I really don't think a 'splash' of milk will do you any harm. If you was drinking a massive amount of coffee in a day then all those 'splashes' of course add up but milk is probably preferable to coffee-mate.
As for nuts, many folks on here are into macadamia nuts. They are a bit pricey but tasty and pretty low in carbs. I think most nuts apart from peanuts and cashews are pretty much okay to enjoy though. Enjoy!
