A few questions Type 2

Hello All,
I have been diagnosed with type 2 in July this year, I have lost 20 Ibs and have had my three monthly review on Tuesday this week.
my Hb A1c is 43..that I believe is 6 %.
I am pleased with the result although the DN has old me in my case I will not be able to reverse the condition, I know that the idea that diabetes can be reversed is open to debate.
I am not overweight. My BMI is spot on
I have pretty much followed a LCHF diet, I have tested and tested to see which foods spike me, and it is clear that any obvious cars will do this, I do not eat fruit for this reason and have to limit myself to even low carb veg., what I would like to ask is if any one can say how long one can keep the ravages of diabetes away through diet alone ?
I am limited to which activity I can do right now through a knee injury.
On top of all of this I have a high cholesterol at 6. I am considering taking Statins, i think I would like to know more if any one has any opinions ?
I wonder if the increase in meat and dairy through the LCHF diet has increased my cholesterol
So, there are a few questions here and if any one can offer any views I would be very pleased to learn of them

The bloodsugar 101 website reviews the major and new studies, criticises them is appropriate, and draws conclusions on ideal blood glucose levels in the long term, with a view to staving off diabetic complications.

The suggested levels are lower than those used by the NHS - but that may explain why the NHS considers diabetes to be a progressive disease, and Jenny Ruhl on the blood glucose101 website believes that it does not need to be progressive.
