A few questions

- I moderately eat one pancake a day. Of course I make them without sugar but does wheat flour increase my blood sugar?
- Can I drink diet Sodas?
- Can I eat rice and noodles?
- Can I use Artificial Sweeteners?

I think that you will find that the answers to all those questions are all yes.

However......

I prefer to stay off diet stuff as I don't react well to the chemical sweeteners. :shock:

I would suggest that you self test before and after to see what your foods and drinks do to you. Personally I found that rice, noodles and all starchy carbohydrates sent my BG levels into orbit so I don't eat them. Testing is the only way to know for sure. 8)

Hi Aurilito,

For myself, I do not eat wheat flour, rice or noodles as they increase my blood sugars too much as does most food with hi carb contents. You can buy lower carb flour on-line - it is called Carbalose.

Watch out for artificial sweeteners, things like Splenda are better than many others which contain some carbohydrates which you need to add to your daily count. You can even buy Da Vinci flavoured syrups with no carbs (also on-line).

You could look at replacing the flour in pancakes by almond meal / ground almonds so you can eat more :) There are several recipes out there, try About.com who have a low carb newsletter/blog which has loads of ideas. Although it is from the US so some ingredients are not as readily available.
