We've got a couple of apple trees in the garden, now cropping reliably, adn this year looks prett good. The windfalls have started coming down and if you get to them quick enough, they're still good to eat, but won't store, same with those with maggot holes etc in them.
So what I've been doing is chopping the bad bits out and keeping them (the not bad bits) in a tub in the fridge. They stew down very well with a bit of water, a lot of cinnamon and star anise. I've also got some dried physalis which are low carb, and threw in an ounce of raisins.
Overall came in around 5gr carbs per dessert spoonful and is great stirred into a bowl of yogurt.
