Yesterday I had a battered haddock fillet (20g carbs) with mushy peas (13g net carbs) and mushrooms (1g carbs) but surprisingly my glucose went up to 8.8. I like the peas a bit sweet so I normally add a sweetener, but I had run out, so added a teaspoon of castor sugar.
So today I switched the sweetener in my coffee for a teaspoon of castor sugar, to see what would happen, and my glucose went up to 7.9. So it was the sugar in the peas!
To think I was drinking sugar-sweetened coffee multiple times a day in the before times, I was never really letting my insulin drop. This probably doesn't come as a surprise to many of you, but I did find it quite surprising. Coffee with sweetener doesn't affect my blood glucose at all (even with a small splash of milk).
So, lesson learnt!
