Inflammation is at the heart of chronic disease, diabetes too. In my search for more information on the low carbohydrate high fat (LCHF) diet and it's affects on inflammation, good or bad, I came across this lecture that explains the role of sugar, refined carbohydrates, and polyunsaturated oil in inflammation (and why saturated fats are good for our health)...


Three weeks ago, I had a vague understanding that sugar, refined carbohydrates, and polyunsaturated fats were bad for us, but I didn't know they were this bad. My poor husband. All of these shifts in my thinking have happened while he's been away on business. We're going to have a lot to talk about when he gets back.
 
the one thing in that video that blew me away was..polyol pathways and T2 making up to 30% fructose out of glucose.

The thing is, dietary fructose typically isn't that bad for diabetics. It's how diabetics process glucose to fructose and the fact that the polyol pathways primary purpose seems to be to encourage diabetic retinopathy that is the problem.

Another question though. Given that the issue with the polyol pathways relates to the oxidation process that produces Fructose, why has research into aldose reductase inhibitors not gone further? It would appear that in clinical trials, these were shown to reduce the onset of diabetic complications (look for epalrestat).

fructose is pretty bad and how it is metabolised , especially when even without eating it..T2 make up to 10 times more than a non T2 diabetic
 
Thanks for that video Jack. So much detail...need to watch again.

Easy access to polyunsaturated fats - (most oils, margerine, etc.) - and processed foods containing sugars and grains are bankrupting our healthcare systems.

I did not know until I watched this video that we have not been told the actual sugar content of processed foods since 1989 in the US and that there are now 52 different names for sugar.

I honestly don't know how to safely eat processed foods or eat out now. My husband and I went out for steak last night. I had a steak and steamed vegetables, but also had a salad with a Ranch type dressing. Blood glucose was 155 mg/dL pre-meal, 194 two 2 hours post meal. Want to bet there was sugar in the dressing? [sigh...]
