I will add pannacotta to the list of things I intend to try! I put cookies on hold for today and tried making a low carb chocolate cake with almond meal. It came out pretty well and was definitely edible, but i need to work on my amounts. I think I needed a bit more vanilla and Stevia.For dessert why not consider pannacotta can be made with various different tastes, vanilla, lemon, raspberries etc

Hi Truffle, many thanks for sharing this. I wondered, do you think using pure unsweetened cocoa powder instead of chocolate would work for this? If so, it would be extremely low carb.I came across this sugarless, flourless cake which I have made and it is surprisingly nice for something with only 3 ingredients.
