Almost colcannon

soaps on telly and people talking about the characters as if they were real.
Colcannon is a classic Irish recipe and this is my version
Ingredients
2 king edward( or other floury) potatoes peeled and cut. Boil until well cooked , drain
4 spring onions cut into slivers
A pudding basin of cold cooked cabbage.
2 or 3 ounces of grated cheese( I used red Leicester)
Generous knob of butter
2 tablespoonsful cream.
Method
Mash the potatoes with the butter and cream( Delia's method with an electric hand mixer does this beautifully) Add the grated cheese and mix thoroughly.
In a separate pan, heat the spring onions and cabbage. When Heated through, add to potato mix.
Serve

Tjhat recipe sounds delicious. My hubbie is irish and misses his mum's cooking. He had given up ever having food like this again. I still hanker after boiled bacon and onion sauce. Have you anymore lovely recipes.
 
Yes I do have loads of recipes
Several are already on the food thread. I'm Czech not Irish though, so I don't know many Irish ones
