I make this one fairly often. it's pretty low in carbs and VERY tasty
Ingredients for 2 hungry or 3 normal people.Can have with rice pasta or potatoes if not low carb. We are and have it alone.
1 small/medium aubergine, chopped into 1 inch chunks
3 medium courgettes chunked. 1 green,2 yellow is pretty
1medium red onion chunked
1/2 each of a red, an orange and a green pepper, de-seeded and chunked( I like to skin them too)
1clove garlic chopped fine
8 medium button mushrooms quartered
4 to 5 medium,Very ripe tomatoes Cut up ( can cheat and use canned!)
Few tablespoons olive oil. salt and pepper.
Equipment
Large frying pan or wok. slow cooker, or casserole dish
Method.
Fry the onion chunks in olive oil until glassy, add garlic and fry a little more. set aside in slow cooker
fry courgette chunks, set aside
fry peppers and tomatoes add to slow cooker
fry mushrooms put in with the rest. You can add a little red wine if you have it.
season
cook slowly a couple of hours
add a little water if it goes dry: it shouldn't
Time
chopping and deseeding 20 mins
cooking time, as long as you like
carbs very few
fat phobes can leave out the frying. it won't taste quite as nice
