I use a mix of almond flour, coconut flour and flaxmeal for baking and am having good results with cakes biscuits and pancakes
My mix is
2/3 cup each of almond flour,coconut flour, ground golden flax seeds.
It has a nice mouth feel. Some of the mixes with coconut flour are way to dry and taste of coconut.
Most cake recipes you need to use extra wet ingredients like eggs or milk as coconut flour absorbs a lot of liquid.
I use it cup for cup, add 1/2 to 1 teaspoon of baking powder and extra eggs, melted butter or milk or milk alternatives.
Makes really tasty pancakes, mug cakes, cakes etc
